So today is cooking day. I haven’t had one of those in a while. It’s a day I devote entirely to cooking and freeze the meals I cook. I may cook for about 5 hours, but I end up with 12 or so dinners. This morning I cooked the easy ones Chicken Fajita Casserole, Broccoli Chicken Casserole, and Hashbrown Casserole (and the girls haven’t even gotten up yet). Currently taking a break and then I’ll do Lasagna and Shepard’s Pie (tangent-apparently my program doesn’t recognize the words shepard’s or shepard, am I not spelling that right?).
A friend of mine in Washington showed me how to do freezer meals. They’re awesome since most days I just don’t feel like cooking and it avoids another trip out to eat. Plus (my) rule makes every dish have a starch, vegetable and a meat so they’re well rounded (we consume so much dairy and fruit all day long I don’t worry about hitting those). You can go to www.30daygourmet.com to learn more, or just google freezer meals.

It’s Shepherd’s pie, and you make it well…nearly as well as your famous lasagna. Maybe someday I’ll get to freezing a few meals ahead too…you’ve inspired me.
Love you,
Mom
Wow!!!Way to go!!!!
